Thanksgiving's Ruby Jewel
Three gourmet cranberry sauce variations, from ruby port elegance to black pepper surprise, elevating the holiday classic
Welcome to this week’s Dinner Bell! Today, I’m sharing three new twists on classic cranberry sauce: one with ruby port, another with apple and orange zest, and a third with a peppery kick.
Thanksgiving’s Darling: Cranberry Sauce
Every Thanksgiving, our table features the classic holiday pies—apple, pecan, pumpkin—but the tart cranberry sauce always stands out.
As a child, my favorite was the canned cranberry sauce—the ‘schloop’ as it slid out, its perfect ridges, and the wobble on the plate. Pure magic!
Now, Thanksgiving tables rarely serve that familiar can, though I know it still appears nationwide. Along the way, I swapped canned for fresh cranberries and never looked back.
I’m excited to share my three favorite cranberry sauce recipes with you. The ruby port version is special because it pairs well with my favorite dessert wine. The other two bring a juicy punch—one with crisp apple and bright orange, the other with a twist of black pepper.

Cranberries with Apple and Orange
Bright and zingy, this take on cranberry sauces brings together the tartness of cranberries, the crisp bite of Granny Smith apples, and a sunny splash of orange juice. Each spoonful offers a perfect balance of sweet and tart notes, making it a lively addition to your holiday table.
Serves: 4 cups | Prep Time: 5 min. | Cook Time: 20 min.

1 Granny Smith apple
2 (12 oz.) bags fresh cranberries
1 1/4 cup sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground cloves

Squeeze the juice from the orange, then set aside.
Peel, core, and quarter the apple, then cut into 1/2-inch dice.
Place orange juice, apples, cranberries, sugar, and spices into a medium saucepan.
Bring to a boil over medium heat, stirring occasionally.
Reduce the heat to low, cover partially, and simmer until the sauce thickens, about 10 to 15 minutes.
Remove from the heat, pour into a serving dish, and let cool to room temperature before serving.
Cranberries with Black Pepper and Orange
Bold and bright, this spin on cranberry sauce marries the warmth of cracked black pepper with the sweetness of orange zest and juice. Each spoonful delivers an unexpected pop of heat that dances with citrus notes, creating an intriguing sauce that’ll have your guests asking for your secret.
Serves: 3 cups | Prep Time: 5 min. | Cook Time: 20 min.
Ingredients
2 oranges
3/4 cup plus 2 tbsp. sugar
Big pinch of salt
Freshly ground black pepper
1 (12 oz.) bag fresh cranberries
Directions
Zest both oranges and set the zest aside.
Juice one orange into a measuring cup. Add enough water to the juice to make 1 cup of liquid. Pour the mixture into a medium saucepan.
Add the sugar and salt to the saucepan and bring the mixture to a boil.
Stir in the cranberries, orange zest, and 20 grinds of freshly ground black pepper. Return to a boil.
Reduce the heat to medium-low and simmer for 9-10 minutes, stirring occasionally, until the sauce thickens.
Remove from the heat and pour the sauce into a serving dish. Let it cool to room temperature before serving.
