The secret of Mary Jane’s legendary fried chicken has finally been cracked. The key? High-quality chicken, a generous dash of patience, and lady luck. After years of family attempts, I finally cracked the code to recreate her crispy, golden masterpiece.
The journey to recreate this iconic dish wasn’t just about following a recipe — it was about sourcing quality chicken, practicing patience while cooking, and relying on a bit of culinary luck.
I started with premium, farm-fresh chicken from Bristol Farm — any reputable farm or upscale grocery store will make all the difference. Patience proved to be the secret ingredient, allowing the oil to reach just the right temperature and the golden-brown crust to form, locking in juices and flavors. This might be why success eluded so many before. And then there was that element of luck, or perhaps an angel was beside me. Maybe Mary Jane herself, ensuring her crispy, flavorful dish didn’t fade into memory.

My grandmother was such a lovely woman with impeccable taste in fashion and style, as you can see in what we believe is her high school photo. Born and raised in Indiana, Mary Jane’s grace and flair remained with her throughout her life, even in her later years. She had a way of making everyone feel special, whether she offered a kind word, a warm embrace, or a smile across the table. You even felt special just sitting with her while she did her crossword puzzles or cheered for her favorite basketball team, the San Antonio Spurs.
Beyond her elegance, she was known for her timeless recipes, which became instant family favorites. Her fried chicken was the stuff of legends—especially because no one could quite recreate it—but that was just the beginning. Her creamy potato salad was always the first dish to disappear at family gatherings, and her rum balls were a tradition that no one could resist. Even today, her recipes remain the centerpiece of many family meals, passed down through generations to keep her spirit alive and her culinary legacy intact.

Mary Jane’s Legendary Fried Chicken
The key: quality chicken, and a whole lot of patience
Taste buds don’t lie - the first bite delivers crispy, golden perfection, giving way to incredibly tender, succulent meat. Simple ingredients like salt, pepper, flour, butter, and oil are perfectly balanced, with that indefinable something that makes it unmistakably Mary Jane’s.
Prep: 5 minutes | Cook: 20 minutes.
Ingredients
Chicken
Flour
Salt
Pepper
Vegetable oil
Butter
Directions
Use chicken breasts, thighs, or a whole chicken, but be sure to clean it early in the day. Cut the pieces to a uniform thickness of about 1 and 1/2 inches to ensure even cooking.
After cleaning, place the chicken in a large bowl and cover with cold water. Store the bowl in the fridge until you’re ready to cook.
In a large flat bowl or plate, combine the flour, salt, and pepper. Roll each piece of chicken in the flour mixture, then set it aside. Repeat with the remaining chicken pieces.
In a heavy cast-iron skillet, heat 4 tablespoons of oil and 4 ounces of butter over medium-high heat. When the oil and butter are hot, carefully add the chicken to the pan.
Resist the urge to turn the chicken for 4-5 minutes—wait until the side in contact with the pan is crispy, golden brown, and releases easily. Then flip it. Cook the second side just as you did the first. Once both sides are crispy, reduce the heat to medium-low, cover the skillet, and cook for 3 minutes on each side. This will ensure the chicken is fully cooked and deeply browned.
Remove the chicken from the pan—it will continue to cook as it cools.

The Tangy Legend That Outlived the Big Boy Himself
Bob’s Big Boy is a restaurant chain founded by Bob Wian in Glendale, California, in 1936. The chain became famous for its double-decker hamburgers and its signature Big Boy mascot.
I spent my youth with friends at Bob’s Big Boy in Santa Ana, California, after long nights at Mater Dei High School events or parties. We frequently found ourselves there at 1 or 2 a.m., enjoying burgers and dipping fries in the blue cheese dressing. Unfortunately, I have no photos to share because we didn’t have smartphones or cameras with us back then—those memories live on in our minds. You can see the Big Boy mascot in the photo above. We often hugged him upon arrival or dressed him up with a hat and scarf if it was cool outside.
At some point, Bob’s Big Boy began selling bottled versions of their famous dressings, including the Bleu Cheese, so everyone could enjoy it at home. I recently found it at Costco—thank goodness for Costco! It’s great on salads, as a dip for vegetables, or wings, or paired with Mary Jane’s fried chicken.

I have never before heard of soaking the chicken in water before dredging it in flour. So, perhaps that was the missing ingredient in my attempt to make fried chicken? Thank you for sharing that tip.
